Maturation
The final stage of refinement — l’affinage — is crucial. The oysters are placed in claires (shallow clay ponds) for at least one month, at a density of around 1 kg per m².
In these shallow waters, rich in nutrients and minerals, they absorb the unique flavours of their environment, developing an alluring sweetness and a long, terroir-driven finish on the palate.

How to store oysters:
Upon receipt, please open the box and check that all oysters are closed. Then place them properly with the flat side facing up, cover with the original packing, and store in the fridge at 2–5°C. Live oysters can remain fresh for 4–5 days when stored this way. Do not consume any oysters that are open and do not close when gently tapped.
