Before maturation, this oyster is carefully selected by the oyster farmer for its regular shape, roundness, and thickness.

Oyster lovers who enjoy rich, meaty textures will choose the Spéciale for its generous flesh, pronounced shell depth, full mouthfeel, and balanced flavour between sweetness and salinity.

The Spéciale de Claire is refined in claires (shallow clay ponds) for a minimum of 28 days, at a density not exceeding 3 kg per m². This process enriches its marine flavour with a distinctive taste of the terroir and strengthens its shell.

Belonging to the category of full-bodied oysters, it has a uniform shape and firmer flesh. Its mantle is white, and the gills may appear green or white. The firm texture gives a mild salty taste softened by a dominant sweetness, and this refined, earthy flavour lingers pleasantly on the palate.

How to store oysters:
Upon receipt, please open the box and check that all oysters are closed. Then place them properly with the flat side facing up, cover with the original packing, and store in the fridge at 2–5°C. Live oysters can remain fresh for 4–5 days when stored this way. Do not consume any oysters that are open and do not close when gently tapped.
